One of my own original recipes, Garlic Smashed Cheddar Mashed Potatoes.

Today I thought I would share with you all one of my own recipes!


Garlic Smashed Cheddar Mashed Potatoes

Ingredients

  • Idaho or Russet Potatoes
  • Clove of garlic
  • Tbs Olive Oil
  • Fresh Basil
  • Salt and Pepper
  • Stick of butter*
  • 1/4 Cup of Milk*
  • Splash of Half and Half*
  • 1/2 cup of Shredded Cheddar Cheese*
  • Bread Crumbs

*You can use more or less, depending on your diet or what you prefer. You can also replace with vegan versions, soy milk..etc.

Prep

  • Peel potatoes and dice them
  • Boil potatoes in a large pot
  • Place olive oil, clove of garlic with pinch of salt in the oven to roast

  • Leave in oven at 325 degrees for about 15 minutes
  • Once your potatoes are soft, use a potato masher or food mixer to mash potatoes for about 2 minutes
  • Add softened 1/2 stick of butter (other half is for something else), milk and half and half.
  • Once they have a creamy consistency, add the oven roasted garlic, salt and pepper and shredded cheese.
  • Mix everything together and beat for another 5 minutes or until desired.
  • Place potatoes in an oven safe pan
  • Melt the other half of the stick of butter and add the bread crumbs to it
  • Sprinkle on top of the potatoes
  • Put pan in oven for another 15-20 minutes
  • Take them out and let them cool, or if you’re me…DIG IN AND ENJOY!
