Recipe time, Caprese Sandwich!

I thought it was time for me to update with a new recipe. I’ve done a bunch of things already, keeping in with a summery theme. I was thinking of posting a soup, but I would rather show you guys a sandwich I am REALLY craving right now!

I never had pesto up until maybe a year ago and I fell in love. It was a weird color, and it just freaked me out. I also have a weird thing with tomatoes, I hate them. But I can tolerate them in this sandwich.

Caprese Sandwich

What you need:

  • Crispy bread, or roll. Foccaccia, italian, semolina, sourdough. Anything works!
  • Tsp Olive Oil
  • Pesto sauce
  • Sliced mozzerella cheese
  • Sliced tomatoes
  • Salt and pepper

This one is particularly easy. I don’t even need to tell you what to do. Simply spread the pesto on your bread, put on the mozzerella cheese, then the tomatoes. I drizzle the olive oil on the tomatoes, and then add a little salt and pepper on top. And that’s it! Some people like to add olives, but I hate olives! Haha. Icky. This sandwich goes great with fresh brewed iced tea, and some fruit or pita chips.

Oh that reminds me. I should do a post on my favorite snacks. Pita and hummus being one of them. My co-worker and I were just talking about how much we love hummus yesterday!

Ok folks, that is all for today. See you soon! Have a fantastic Thursday <3

Hey, I’m not a vegetarian, but I do love vegetarian food, and the sandwich in this post looks delish and easy to make. Being in Uni doesn’t give me much time to cook, so am glad that the sandwich is easy to make. Anyway, nice blog, keep it up :-)
